\n\nThe quality of olive oil depends on many factors, starting with the olive variety, through cultivation, harvesting, to processing. Not all olive oil is the same – and that's a good thing! Because the variety of aromas and flavors is what makes olive oil so fascinating. There's extra virgin olive oil, virgin olive oil, olive oil from refined olive oil, and olive oil blends. Extra virgin olive oil is the highest quality grade and is made from olives that are gently pressed or crushed without the use of chemical treatments. It has a maximum acidity of 0.8%. When buying, be sure to look for the designation “extra virgin” or “native extra” – that's your quality mark!
